COOL, REFRESHING CUCUMBER SALSA!
Like most of us, B and I enjoy cucumbers the same old way. As a snack, in a salad and pickled. Don’t get me wrong! Cucumbers are great as they are and in our established standbys. But this zesty cucumber salsa, with bell peppers, dill, red onion and more, will change your mind about this garden fruit!
We particularly love it over grilled salmon, but I think it would be really good over grilled chicken, too!
Actually, I have a hard time not just eating it with a fork! It’s just that good!!
A light, zesty, spicy condiment to kick up your cucumbers!
- 1 ea Seedless Cucumber Zested
- 1/2 c Red Bell Pepper Diced
- 1/4 c Red Onion Julienne or Diced
- 2 tbs Dried Dill
- 1 tsp Granulated Garlic
- 1 tsp Red Chili Flakes
- 1/2 c Low Sodium Soy Sauce
- 1/4 c Rice Wine Vinegar Unseasoned
- 2 tbs Sesame Oil
Remove peel from cucumber or zest with a lemon zester for better eye appeal. Cut in half length wise and run a sharp spoon down the middle removing the inside "seeds". Cut in 1/4" slices.
Mix cucumber with remaining ingredients. Let sit for at least 30 minutes before serving.
